Jollof Rice, a spicy Nigerian delight

Jollof Rice derives from the Wolof people of Senegal and Gambia. It is an exquisite dish that can be cooked for any or every occasion – from parties to graduations. The dish is called Benachin, which, in Wolof, means “one pot”. Since its origin, Jollof Rice has spread widely throughout West Africa and the world. It has such a spicy and traditional taste.
Ingredients:
full bulb of any onion
2 big cans of crushed tomatoes
2 medium size red peppers
a can or two
1/2-1 c. vegetable oil
a couple sprinkles of salt
2 sticks each of bay leaf and basil
3 cups of water
meats of your choice
garlic ,if necessary
2 cups of Basmati Rice

Directions:

1. Before starting on the stew parboil the rice(to get rid of excess starch) and then leave it aside for later.

2. Chop your onions and peppers until diced then put your oil in the pot and
heat it till it sizzles

3. Open your cans of crushed tomatoes and tomato paste and add it with the
onions and peppers into the pot. sprinkle with salt keep turning it and let it set
for 10-15 minutes

4. Start to parboil your meats and let it get dark and brown.

5. When meat is ready add it the stew, then get you bay leaves and basil and also
add it to the stew and let it set for 5-10 minutes.

6. When that is done, get your parboiled rice and put it in the stew , add water
and stir when done mixing let it set, cover the lid and let it steam for 20
minutes.

7. Serve to family and friends and enjoy
