Recently, mug cakes have become all the rage and it’s no surprise because they are so fast and easy to make. However, it’s quite difficult to find a good mug cake recipe.

The following recipe, for a red velvet mug cake, is not only delicious, but it makes a double batch that you can share with your significant other, friend, or just enjoy by yourself. It’s an egg-free recipe, requires ingredients that you probably already have in your kitchen, and you only need a microwave to cook it!

Here’s how to make this easy and tasty Valentine’s Day dessert:

What You’ll Need:

  • 6 tablespoons milk
  • 1 teaspoon white vinegar
  • 1/2 cup all purpose flour
  • 1/4 sugar
  • 2 teaspoons cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons vegetable oil
  • 10 drops red food coloring
  • 1/4 cup mini chocolate chips
  • 1 tablespoon cream cheese (optional)
  • Powdered sugar for serving
  • Sprinkles (optional)
  • 1 large mug or 2 mugs

Directions:

  1. In a large mug: whisk together the milk, vinegar, flour, sugar, cocoa powder, baking powder, salt, vegetable oil, and red food coloring until well combined (If you’re splitting the batter, mix it all in a large bowl, the separate it into two mugs).
  2. Fold in the mini chocolate chips and give the batter another stir. Make sure you’re using mini chocolate chips, otherwise regular sized chocolate chips will sink to the bottom of the mug.
  3. (Optional) Add a dollop of cream cheese into the middle of the batter and push down so it’s submerged completely. This gives the mug cake and almost, “molten” quality and also substitutes for the cream cheese frosting on top.
  4. In a large mug: cook for five minutes or until a skewer comes out clean of batter. In two mugs: cook for a minute and a half, but add time if necessary.
  5. Garnish with powdered sugar or pipe some frosting on top, add sprinkles and enjoy!

Remember, all microwaves are different, so when cooking the cake, keep an eye on it.
