The lucky recipe: Irish soda bread

The+lucky+recipe%3A+Irish+soda+bread

Yes, I know it’s late but…. In honor of St.Patrick’s Day, I felt it necessary to post a great recipe for Irish soda bread. (It just took me some time to find it.)

Whether your lineage hails from the Emerald Isle or not, Irish soda bread can be a staple of any home cooked meal.  This recipe is easy to follow, and doesn’t require the dough to be set aside to rise, which saves a lot of time!  Feel free to add your own twist, I decided to put half a cup of golden raisins and half a cup of regular raisins in mine, some people even choose to add nuts.  Whichever direction you decide to take this recipe, it’s sure to be loved by all.

Ingredients:

  • 3 cups sifted flour (I recommend pastry or cake flour)
  • 2-4 tbsp sugar (depending on how sweet you want your bread to be)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1 cup raisins
  • 1 1/3 cup buttermilk
Directions:
  • Mix dry ingredients together
  • Stir in the raisins and milk
  • Mix together until ingredients form a sticky dough
  • Turn out onto flour board and kneed until smooth (8-10 mins, careful not to over kneed!)
  • Line a 9 inch cake pan with parchment paper and add the dough
  • Spread dough out in pan
  • Score the dough with large “X” on the top
  • Bake at 350 degrees for 60-65 mins (I baked mine for 62)
  • Remove bread from oven
  • Let the bread cool for about 15 minutes
*Bread lasts up to 2 days
