As the warm weather finally reaches Chicago, it’s time to start cooking like it’s summer. One of my favorite things to eat in the summer (and all year round for that matter) is strawberry banana soup. Before you decide that that sounds absolutely disgusting sounding, know that this soup is served cold. Strawberry soup is basically a smoothie, but it’s considered a soup dish, making it appropriate to eat as a dinner course. Not only is it delicious, but it’s incredibly easy and fast to make.
You will need the following ingredients:
– 1 pound of strawberries
– 1 banana
– 2 ounces of Rich’s Whip
– 1/2 cup of orange juice
– 1/4 cup of sugar
Instructions:
1. Wash and cut the strawberries into quarters.
2. Blend the strawberries, orange juice and sugar in a blender until smooth.
3. Add in the Rich’s Whip and blend until the contents in the blender appear slightly thicker.
4. Mash a banana and add it in the blender. Continue blending until most of the banana chunks are gone.
5. Put the strawberry banana soup in the refrigerator so it will get colder before serving.
There is one additional and optional step when serving the soup. After you pour the soup into the individual bowls, add a mint leaf on top to enhance the appearance.
