Yes, I know it’s late but…. In honor of St.Patrick’s Day, I felt it necessary to post a great recipe for Irish soda bread. (It just took me some time to find it.)
Whether your lineage hails from the Emerald Isle or not, Irish soda bread can be a staple of any home cooked meal. This recipe is easy to follow, and doesn’t require the dough to be set aside to rise, which saves a lot of time! Feel free to add your own twist, I decided to put half a cup of golden raisins and half a cup of regular raisins in mine, some people even choose to add nuts. Whichever direction you decide to take this recipe, it’s sure to be loved by all.
Ingredients:
- 3 cups sifted flour (I recommend pastry or cake flour)
- 2-4 tbsp sugar (depending on how sweet you want your bread to be)
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp salt
- 1 cup raisins
- 1 1/3 cup buttermilk
Directions:
- Mix dry ingredients together
- Stir in the raisins and milk
- Mix together until ingredients form a sticky dough
- Turn out onto flour board and kneed until smooth (8-10 mins, careful not to over kneed!)
- Line a 9 inch cake pan with parchment paper and add the dough
- Spread dough out in pan
- Score the dough with large “X” on the top
- Bake at 350 degrees for 60-65 mins (I baked mine for 62)
- Remove bread from oven
- Let the bread cool for about 15 minutes
