This macaroon is great for parties because the recipe makes about 2 1/2 dozen, so there will be plenty to go around. I got this from my mother who received it from her mother over 30 years ago, so you know it has to be good!
Ingredients: 2 2/3 cups of BAKER’S ANGEL FLAKE Coconut
2/3 cup of sugar
1/4 cup of all-purpose flour
1/4 teaspoon of salt
4 egg whites
1 teaspoon of almond extract
1 cup of almonds
How to make them: Pre-heat your oven to 325 degrees. Combine the coconut, sugar flour and salt in a sperate mixing bowl. Slowly stir in the egg whites and almond extract. Once all of that is mixed together, add the almonds and make sure to mix well. Grab a teaspoon and use it to shape little balls and put them on a lightly greased baking sheet. If you are a fan of cherries feel free to add one on top of your macaroon to add some awesome flavor. Now that your oven is heated and ready to go, place the macaroons in the oven and bake them for around 20-25 minutes or until the edges are golden brown. When you feel they are cooked perfectly, remove them from the oven and immediately take them off the baking sheet and leave them out too cool.
Happy Holidays!
